These cookies are a godsend.


And yes I know, that's a little dramatic. But for a mama who feels like it's her duty to always have freshly baked cookies in the house for the kiddos - who also hates to get the stand mixer out and deal with softening butter, chilling dough, and making trays upon trays of cookies - this cookie recipe is THE perfect solution. Here's what makes this recipe the ultimate easy chocolate chip cookie recipe:

  1. It's easy to make. You melt the butter in the microwave. You literally use a kitchen fork to mix all the ingredients. Those two sentences alone make my heart go pitter-patter.
  2. It's a small batch recipe. It makes approximately 20 cookies in total, and the dough actually is the best when you keep it to its original proportions (instead of doubling/tripling it). Again, this makes it the perfect recipe to just make a few warm fresh cookies for the simplest occasions.

I got this recipe from a fellow firefighter wife. And I think she got it from a friend who got it from a friend who probably got it from a chocolate chip cookie angel disguised as another friend. That seems like a likely scenario, right? Either way, this recipe has become the ideal treat to make on short notice, and for that, I'm forever thankful.

  1. 1/2 cup (1 stick) unsalted butter
  2. 1/2 cup brown sugar, packed
  3. 1/4 cup white sugar
  4. 1 large egg
  5. 1tsp. vanilla extract
  6. 1/2tsp. baking soda
  7. 1/2tsp. salt
  8. 1+1/2 cups all-purpose flour
  9. 1/2 cup chocolate chips (can be semi-sweet, dark, etc.)

directions


  1. Preheat oven to 350 degrees & line two cookie sheets with parchment paper.
  2. In a large heat-safe bowl, microwave the butter until just melted. Whisk in the two sugars until thoroughly combined (I legit use a fork). Let the mixture cool for a minute, and then whisk in the egg and vanilla.
  3. Sprinkle in the baking soda & salt, and stir in. Add the flour and stir in until fully combined into a smooth dough. Stir in the chocolate chips.
  4. Drop the dough by rounded tablespoons onto cookie sheets (about 2 inches apart).
  5. Bake for 9-10 minutes. The cookies will look slightly underdone, but they will firm up as they sit.
  6. Let cookies cool on baking sheet for 5 minutes, then transfer to a rack to cool completely (if you can keep your kids from eating them warm).
  7. Serve them on a platter and make sure to wipe your brow often and give a few big breaths so that your family and friends will think you really worked all day in the kitchen and then they'll say things amongst themselves like "wow I can't believe she ALWAYS has freshly made cookies on hand" and "I wish I could be like her" and other things like that.
