A forgotten family favorite

This Swiss cheese loaf is in my memory bank from way way long ago; we're talking like first childhood memories of holidays. It was a crowd favorite and I remember grabbing little bits off of the table with my little baby fingers. Everyone loved this recipe. It was a hit! And then, as quickly as it appeared, it just seemed to... vanish...never to be talked about again.

Fast forward to the 2010 Winter Olympics in Vancouver. I was a young bride and eager to entertain in our new home. The opening ceremonies seemed like the perfect reason for a family get-together! I went all out with the Canadian theme - everything was about cheese and beer! I summoned my mom for cheesy recipes and, after scouring her recipe bank, came across this one. Aha! Behold, the ancient Swiss cheese loaf recipe! We enjoyed it once again in 2010, and have been making it once again ever since!

This recipe has a few different steps, but it's yummy and cheesy and ooey gooey. Yum.

the recipe

ingredients

  1. 1 loaf French bread
  2. 1+1/2 sticks butter
  3. 1+1/2tsp. poppyseeds
  4. 1 medium onion, sliced paper thin
  5. 1/2Tbs. dry mustard
  6. 1/2tsp. salt
  7. 8oz. Swiss cheese, cut into thin cubes

directions

  1. Score bread diagonally in a criss-cross pattern, almost to bottom of the loaf, but still so everything is connected still.
  2. Stuff the cheese cubes into each bread section, so that every nook and cranny gets a piece of cheese (your meticulousness in this step will pay off later!)
  3. Place your cheese-stuffed bread loaf onto a cookie pan covered with a large piece of foil.
  4. Sauté onion in butter until transparent, being careful not to burn.
  5. Add salt, poppyseeds, and mustard. Cook 3 minutes.
  6. Drizzle the onion mixture over your bread.
  7. Wrap entire loaf in the foil. Bake at 375 degrees for 20 minutes.
  8. Uncover and continue to bake 5-10 ,minutes until crisp.
  9. Cut loaf into slices and enjoy. Then sing Oh Canada! for nostalgia's sake.
