Now this one makes me think of Easter.
Seriously. We only have this "salad" once a year - Easter dinner. This was my Grandpa Demski's favvvvvvvvorite side dish. Everybody knew he loved it. I can't remember an Easter Sunday without my mom's fluffy fruit salad.
Grandma + Grandpa Demski...and me!
the recipe
Ingredients
1/2 pint heavy whipping cream
3oz. cream cheese, softened
2 cups mini marshmallows (about half a 10oz bag)
"some" cans of fruit salad, very well drained
bananas
Directions
- The night before Easter, mix the cream, cream cheese, and marshmallows with a spoon in a large bowl. Refrigerate overnight, covered. You can redistribute the marshmallows a couple times before you go to bed, it can't hurt the cause.
- An hour or two before your meal, whip the creamy heavenly mixture with an electric mixer until fluffy. Add in enough drained fruit + sliced bananas and carefully blend with a spatula until you like the proportions (if my sister had it her way, there would be one sliced bananas and just the cherries from the canned fruit and the rest fluff)
- He is risen! The fluff is risen! Enjoy!
Memories from Easter 2020 aka Pandemic Easter. We were all determined to keep family traditions the same even though we were still social distancing from each other, so my mom cooked the entire meal and we all set up our own dining tables in their garage. A unique Easter for sure, and one I'll likely never forget! All you need is love!
