The perfect winter meal


As I sit and type this, it is about the 84th [not really] day of sub-freezing temps, it's snowed at least part of every day for the past week, and my phone just got a notification that there's ANOTHER winter weather advisory through tomorrow. Great, just great.


Lucky for me, I already have all the ingredients for my favorite tomato soup. It's comfort in a bowl. Rich, a little creamy, a touch of sweet, with gorgeous bites of tomato. Hit me with your best shot, Mother Nature. [Actually no, please don't, I don't know how much more of this winter I can take.]

  1. 6Tbs. butter
  2. 1 onion, diced
  3. 2- 14oz. cans diced tomatoes
  4. 6 cups tomato juice
  5. 3Tbs. chicken base
  6. 4-6Tbs. white sugar
  7. Pinch of salt
  8. Pepper to taste
  9. 1 cup dry white wine
  10. 1.5 cups whipping cream
  11. Fresh basil
  12. Fresh parsley

directions


  1. Melt butter in a pot over medium heat. Add onions and cook until translucent.
  2. Add in tomatoes, tomato juice, chicken base, sugar, salt and pepper. Heat until just boiling, then turn heat down to medium-low.
  3. Add in wine and cream, stir to combine.
  4. Mix in chopped basil and parsley. Enjoy!
