The perfect winter meal
As I sit and type this, it is about the 84th [not really] day of sub-freezing temps, it's snowed at least part of every day for the past week, and my phone just got a notification that there's ANOTHER winter weather advisory through tomorrow. Great, just great.
Lucky for me, I already have all the ingredients for my favorite tomato soup. It's comfort in a bowl. Rich, a little creamy, a touch of sweet, with gorgeous bites of tomato. Hit me with your best shot, Mother Nature. [Actually no, please don't, I don't know how much more of this winter I can take.]

ingredients
- 6Tbs. butter
- 1 onion, diced
- 2- 14oz. cans diced tomatoes
- 6 cups tomato juice
- 3Tbs. chicken base
- 4-6Tbs. white sugar
- Pinch of salt
- Pepper to taste
- 1 cup dry white wine
- 1.5 cups whipping cream
- Fresh basil
- Fresh parsley
directions
- Melt butter in a pot over medium heat. Add onions and cook until translucent.
- Add in tomatoes, tomato juice, chicken base, sugar, salt and pepper. Heat until just boiling, then turn heat down to medium-low.
- Add in wine and cream, stir to combine.
- Mix in chopped basil and parsley. Enjoy!
