My very favorite flavors all in one big bite
I love caprese. I love the combo of the basil and tomato, with the creaminess of the cheese, and topped with the zing of balsamic. Scrumptious! What I like about this recipe is that it can be picked up and eaten easily, no cutting slices of tomato and cheese on your plate or anything messy like that.
And thanks to this little beauty, topping my skewers with some balsamic glaze is not only easier but it also looks so much nicer! This is one of my favorite things from Trader Joe's, but I believe you can now buy Balsamic glaze at other grocery stores. Otherwise, you can make your own glaze by gently simmering some balsamic in a saucepan until it thickens up. But who has time for that?!
the recipe
ingredients
- Cherry tomatoes
- Mini mozzarella balls (I get a big pack from Costco) or fresh mozzarella cheese cut into cubes the same size as the tomatoes
- Basil leaves
- Balsamic glaze
directions
- With a fancy toothpick, skewer your cheese ball/cube, basil leaf folded in half, and tomato.
- Place all your filled skewers on your serving tray.
- Top with a pinch of salt and pepper if desired
- Squirt on your glaze in a very fancy and artistic manner. Then kiss your fingers like an Italian chef while saying Bon Appetit loud and proud.
