Just like Grandma Demski, my Aunt Connie is a gooood baker.


The apple clearly didn't fall far from the tree. Grandma Demski was the kind of baker who made everything from scratch (in hindsight, that was probably the only option when she was a young mother in the 40's and 50's) and Aunt Connie definitely got her mom's baking gene.

Aunt Connie makes this pumpkin bread every single Christmas. And really, what is more Christmasy than waking up on a cold snowy morning to the smell of spiced pumpkin break baking in the oven? Yum.

  1. 1 cup vegetable oil
  2. 2 cups sugar
  3. 2 cups (a 1 pound can) pumpkin puree
  4. 1tsp. salt
  5. 1tsp baking soda
  6. 1tsp cinnamon
  7. 2 cups flour
  8. 5 eggs
  9. 2 packages Jello instant coconut cream pudding mix

directions


  1. Mix all ingredients together and pour into a 2 greased loaf pans {or 4 mini loaf pans}.
  2. Bake at 350 degrees for 1 hour.
  3. Enjoy that aroma. Enjoy a cup of coffee. Enjoy a slice of warm pumpkin bread.
